Sap tapped from the coconut palm blossom, gently evaporated into sugar. Less refined than white sugar, with a smooth caramel flavour, a little inulin fibre, trace minerals and less fructose.

Ours is the real bean; a hand-pollinated orchid, with 200+ aroma compounds and its own antioxidants. Over 99% of "vanilla flavour" is just vanillin, a single molecule made from wood pulp or petroleum.

Hand-harvested off Brittany's marshes and dried by sun & wind, not stripped & refined like table salt. A pinch rounds off the cacao's bitterness, lifts the sweetness and ties the whole shake together. And it maintains its sodium, the electrolyte our bodies run on.
